Savoury Cheese and Pepper Loaf

½½Sweet Red Pepper
½½Green Pepper
3.5 oz100gButter
7.4 oz210gGrated Hard Cheese
1 cup1 cupSelf Raising Flour

Remove seeds from peppers, core and cut into very small pieces. Chop the onion until fine. Beat the butter and eggs until frothy, add the flour and then mix in the peppers, onion, grated cheese and seasonings to taste.

Place the dough in a buttered loaf tin and place in the centre of an oven preheated to 375 F / 190C for about 50 minutes until golden brown.

Allow to cool before cutting into slices. Serve cold.

Can be given additional flavour by adding chopped bacon to the recipe.
