Aunt Martha's Sponge Cake

3 | eggs |
1 cup | sugar |
4 tbsp | warm water |
1 cup | flour, sieved |
1 level tsp | baking powder |
1 tsp | flavouring extract or lemon juice |
Heat oven to 205 C / 400 F.
In a medium sized bowl, add eggs and beat at half speed for one minute.
Add sugar and beat together for 5 minutes more until thick and lemon coloured.
Add 4 tablespoons warm water and mix again for 1 minute.
Sift together flower and baking powder and stir into wet ingredients. Do not over mix once the flour
is added or cake will be tough.
Add flavouring extract (vanilla etc). Place in two shallow 9" cake tins and place in oven at 205 C /
400F for 5 minutes, then at 190 C / 375 F for 20 mins.
