Chorizo Mexican Sausage (Beef) and Chilli Recipe

Lbs/oz g/kg
1lb450glean, ground hamburger
½ tspSalt
½ - 1 tspcumin
2 tbspchilli powder
1 clovegarlic, minced (optional)
1 tspOregano (or Italian Herb blend), rubbed between the palms of hands
1 or 2 tspVinegar (white, apple, and rice all work well)

Add all ingredients together and mix thoroughly. (Let stand in covered bowl for 24 hours.) Slow cook on the stove and pour off any excess fat. The leaner the hamburger the better the chorizo.

To the above Mexican sausage chorizo beef recipe, simply add ½ cup of red wine, a can of red beans or kidney beans, and a can of diced tomatoes with Italian herbs. Kroger makes the tomatoes with herbs already mixed in and that works well.

Fiddle with the ingredients to make it as hot or mild or tasty as you like. A pinch of cayenne for heat, more cumin if you like that spice (and I do), more wine if you like.
